What you need….
2 packages light cream cheese, softened
1 packaged frozen chopped spinach
1/2 package shredded mozzarella & cheddar cheese (amounts to 3 cups)
3 large garlic cloves, diced
1/2 onion (yellow or spanish), diced
What to do….
Pre-heat oven to 325F.
Dice up onions and garlic, set aside. Let spinach thaw (or defrost in microwave); let cream cheese soften (when I removed the spinach from the microwave and added it to the bowl, it actually softened the cream cheese).
In a large bowl mix together garlic, onions, cream cheese and two cups of shredded cheese. Blend well. Add to a dutch oven or oven safe dish, spray with cooking spray. Spread evenly and sprinkle last cup of shredded cheese.
Bake in oven for 10-15 minutes. Remove from oven and let cool for 5 minutes. Serve with your choice of chip.
