12 Days of Baking: White Chocolate Chip Macadamia Cookies (Day 12)

I told you it would be a gooder for the final day of the 12 Days of Baking series! The White Chocolate Chip Macadamia Nut Cookie has to be my hands-down favorite of all time. And no, I’m not talking about the ones from Subway. Sure the nuts might be expensive (up to $13 for a bag), but in the end, so worth it.

What you’ll need

1 cup shortening
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
2 cups White Chocolate Chips
1 cup coarsely chopped macadamia nuts

Directions

Preheat oven to 375°F.

Cream sugars and shortening together until light and fluffy. Add eggs one at a time and vanilla. Blend well.

In a medium bowl, sift flour, salt and baking soda. Gradually add to creamed sugar mixture. Blend well. Add in chocolate chips and nuts.

Bake 8-10 minutes until light golden brown on edges.
