This recipe has become a tradition in our household since two years ago. I was searching online for a great Christmas breakfast recipe and stumbled upon a Christmas breakfast casserole. It was something different and it combined all of our favorites – eggs, sausage and cheese. It really is such a tasty delight and something so easy and enjoyable to make.
1 pound ground pork sausage (or any sausage you like)
1 tsp mustard powder1/2 tsp salt
6 eggs beaten
2 cups milk
6 slices white bread, toasted & cubed
8 oz cheese, shredded (your preference)
1 tbsp extra virgin olive oil (for cooking sausage)
1. Crumble sausage into a medium skillet. Add oil and cook over medium heat until evenly brown, drain.
2. In a medium bowl, mix together mustard powder, salt, eggs and milk. Ass the sausage, bread cubes and cheese; stir to coat evenly. Pour into a greased (I use Pam spray) 9×13 inch baking dish. Cover and chill in refrigerator over night.
3. When ready to cook in the morning, pre-heat oven to 350F.
4. Cover and bake for 45 minutes, reduce heat to 325F and bake for an additional 30 minutes or until set.
