A friend of mine posted on her Instagram a very delicious looking chickpea salad sandwich and I knew I had to try it. Hers was vegan and from Oh She Glows cookbook by Angela Liddon. Mine would have been vegan, except, I added mayo. Nonetheless it was very, very delicious.
Here’s the recipe for my version, for Angela’s you will need to buy her cookbook (and I suggest you do!):
1 can chickpeas, drained and rinsed
1 celery stalk, diced
1/2 cup dried cranberries
pepper to taste
garlic powder to taste
2 tbsp mayo (or vegan mayo, greek dressing…)
Mash chickpeas once drained and rinsed in a large mixing bowl. You want egg salad mashed but leave a few whole chickpeas. Add diced celery, cranberries, pepper, garlic power and mayo. Blend well. Add on to your favourite bread.
This is a great substitution for chicken salad or egg salad sandwiches. It is also a great light meal during the summer.
